Entree Tuesday Favorites

A post from June 2010 - slightly edited

We are huge fans of Dinner Impossible. Robert Irvine can come up with some of the craziest concoctions that are delectably edible.

When I wrote this post David and I had recently watched the episode where Irvine was cooking for Divorce Court's, Judge Lynn Toler for her 2,000th episode.

His mission: to divorce common pairings of food and re-marry them so to speak to make new dishes.

This panini was one of his re-marrying creations and it is very simple to make.

Ingredients:
2-4 loafs of small french bread
1/4 lb. of smoked turkey
1/4 lb. of smoked ham
12 oz. of shredded cheese (approx. 2 cups)
14 slices of swiss cheese (cut in halves)
4 tbsp of butter (slightly melted)
garlic salt & pepper to taste (optional)
Preheat oven to 375 degrees

Cut each loaf in half. With the slightly melted butter, butter both halves of the loaf. Add garlic salt and pepper to taste (optional). On the bottom half of the loaf sprinkle shredded cheese.

Then chop smoked turkey and ham and spread about 1/2 cup onto the shredded cheese.

Then lay approx. 5 halves of swiss cheese on top of the meat mixture.

Then sprinkle more shredded cheese.

I lined the bottom and top cookie sheets with foil. The panini's look like they're in a metal box.

I had the kids wash 2 bricks and cover them with foil.

And then set the foil covered bricks on top of the cookie sheet.

Put in an over preheated at 375 degrees for 20-25 min.

I made 3 loaves and less than a half was left over the night we made them. This was our simple warm sandwich family dinner night.

We make these at least once a month and serve with soup, chips or fries.
